I was very lucky to have my 2 motorcycle drivers to bring me to local restaurants. I ate where local people had their lunch, ordered what they usually ordered. Roadside family-run kiosk, 2nd floor restaurants, night market food stands and

I find it true that Vietnamese cuisine is very different from other asian food. It is usually light in nature. Southern food is very fresh and light, and northern food usually serves hot.

My favourite ? Gotta be the "wrap it yourself" rice-paper salad roll.
